Hammers : Control the attack of the hammers. Adjust the impact force, its stiffness and the noise it produces. Modulate them over the entire keyboard range or depending on the MIDI velocity.
Beyond the framework : the trick is to use vintage combinations of effects or adjust piano parameters to extreme values. Lounge Lizard can really become a wild animal. It retains the reproducibility of the instrument, but may sound beyond what you heard from an electric piano before.
